I cooked these tartlets for the sole purpose - to try the recipe for apple-lemon Kurd. I was very interested in the presence of the apple in the cream. Positive experience with peach and lemon Kurd pushed to the experiment. Of this number of ingredients, the Kurd is more than necessary for this recipe. But, placing it in a clean container and storing it in the refrigerator (the Kurd can be stored in the refrigerator for about a month), you will have the opportunity to stuff pies and cakes, use it as an independent dessert or sauce for slaves or pancakes. Shortbread dough varied, reducing the amount of butter at the expense of cream cheese (I have Philadelphia). The result was pleased, so I hasten to share a recipe!
For a short dough, chop the cold oil into pieces and combine it with flour, sugar powder, a pinch of salt and cream cheese. In a blender, knead the dough quickly and conveniently, I advise you to use it.
The dough is divided into 6 equal parts, roll it out and lay out the tartlet molds. You can bake a big tart. Billets send to the refrigerator on demand.
While the dough cools, let's take care of the cream. It will take 450 grams of ready-made apple puree. To do this, peel 4 large apples, cut into small cube and send to a pan, pour 100 ml of water and simmer on medium heat until apples are ready.
With lemons remove the zest and squeeze the juice. It turns out about 100 ml.
Add sugar, lemon juice, zest and butter to the apple sauce.
As soon as the oil has melted (the temperature does not exceed 60 ° C), add the eggs and, continually stirring with a whisk, bring to a thickening. Here it is necessary to work with a small fire, so that the eggs are not welded, and be patient, because the process takes 15-20 minutes.
The optimum temperature of the finished Kurd is 80 ° С.
Preheat the oven to 175 ° C. Tartlets are baked for 15 minutes, removed from the oven, filled with a Kurd, lowered the temperature to 150 ° C and bake another 30-40 minutes to light golden color.
Remove from oven, remove from molds.
